Photograph the jar right after feeding, then drag the two lines: one on the jar floor, one on the level of the culture. When it has domed, photograph it again and mark the new level. Ovenspring works out the percentage and the time it took. The measurement is arithmetic on your own marks — the app never guesses a line for you.
Feed today, fridge it, or bake-ready. It is computed from how regularly you have fed the starter and how it has actually risen, so it sharpens as the record grows. A brand-new starter shows a "still learning" state rather than a confident number.
